Shortbread cookies

 

This is my Grama's traditional shortbread recipe and no Christmas would be complete without them. There really easy and can be done with cherries or with sprinkles, so they are lots of fun for the kids to get their aprons on and help.

 

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 1/4 cup red maraschino cherries, quartered
  • 1/4 cup green maraschino cherries, quartered

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine butter, flour, and confectioners' sugar. With an electric mixer, beat for 10 minutes, until light and fluffy. Spoon onto cookie sheets, spacing cookies 2 inches apart. Place a piece of maraschino cherry onto the middle of each cookie, alternating between red and green.
  3. Bake for 15 to 17 minutes in the preheated oven, or until the bottoms of the cookies are lightly browned. Remove from oven, and let cool on cookie sheet for 5 minutes, then transfer cookies on to wire rack to cool. Store in an airtight container, separating each layer with waxed paper.

Darling cheesecake

INGREDIENTS:
2 PACKAGES CREAM CHEESE
1 PINT OF WHIPPING CREAM
1/2 CUP SUGAR
2TSP OF VANILA
MIX CREAM CHEESE, ¼ CUP SUGAR AND 1 TSP VANILA TOGETHER UNTIL SMOOTH. IN SEPARATE BOWL WHIP WHIPPING CREAM, ¼ CUP SUGAR AND 1 TSP VANILA UNTIL STIFF AND YOU CAN MAKE PEAKS. FOLD THE WHIPPING CREAM MIXTURE INTO THE CREAM CHEESE MIXTURE. BLEND AND STIR UNTIL SMOOTH.
POUR YOUR MELT IN YOUR MOUTH CHEESE CAKE MIXTURE ON TO YOUR FAVORITE GRAHAM CRUST. TOPPINGS CAN INCLUDE:
CHERRIES, ANY BERRY. THE FROZEN STRAWBERRIES IN LIGHT SYRUP ARE DELICIOUS, TOO!

THIS CHEESECAKE WILL MAKE A PERFECT ADDITION TO ANY HOLIDAY MEAL.

Berry and Lemon Loaf

Ingredients Glaze

¼ cup butter, softened 3 Tbsp lemon juice from your grated 1 cup organic sugar lemons
Grated zest of 1-2 lemons ¼ cup confectioners’ sugar
2 eggs
1 ½ Cups 100% whole-wheat flour
1 tsp Baking powder
¼ tsp salt
½ cup milk
1 ½ cups fresh of frozen berries of choice

1. Preheat oven to 350F. Spray an 8 x 4 inch loaf pan or a 9 x 9 inch square pan with non-stick spray or grease with olive oil.
2. In a large bowl, beat the butter, sugar, and lemon zest with an electric mixer for about a minute. Add the eggs one at a time, beating well.
3. In a medium bowl stir together the flour, baking powder, and salt. Alternately add the flour mixture to the butter mixture (starting and ending with the flour); stir by hand until it’s just combined; then add the berries with the last of the flour mixture and stir gently until just combined.
4. Pour the batter into the pan and bake for about an hour until the top is cracked and loaf is springy to the touch, you can also insert a toothpick or fork to and area without a berry and see if it comes out clean. Poke the top of the loaf all over with a toothpick or skewer. Stir the lemon juice and confectioners’ sugar together and while the loaf is still warm pour the glaze over the top. Cool in the pan.

Tip: You can toss your berries with a little flour to keep the juices from escaping into the batter, but put frozen berries back in the freezer until your going to use them.



Okay my next recipe I am posting is also for the recipe contest, this is my kids favorite meal hope you guys enjoy it as well!!!

Family dinners

Worlds greatest spaghetti

To start you will need
One pound of extra lean beef
2 ribs of celery
One large onion
½ a bulb of garlic
1 red pepper
1 jalepeno pepper
A handful Sun dried tomatoes
Cinnamon
Balsamic vinager
Brown sugar
1 can of tomato soup
1 can of garlic tomato paste
1 can of Mexican stewed tomatoes
2 tbls of olive oil
½ a package of your favourite pasta
In good size pot warm your olive oil put in your diced celery, then add your chopped onion, along with your minced garlic ,finely diced jalepeno, and diced red pepper cook until your veggies are soft . at this point you add your ex lean beef and then add one tablespoon cinnamon, two tablespoons of balsamic vinager, one heaping tablespoon of brown sugar let that simmer for about 5 to 8 min med to low.
After that add your cans of tomatoes and let simmer for a few hours.
Finaly cook your pasta , open a bottle of red wine and enjoy!

Hayley s pasta salad
I call this Hayley s pasta salad because Hayley my daughter could live on this and eat it everyday

What you will need
One package of your favourite pasta we like fusilli
Half a cauliflower
Bunch of broccoli
1 red pepper
1 yellow pepper
1 sweet onion
1 small container of cherry tomatoes
crumbled feta cheese
your favorite dressing ours is house
Cook and cool your pasta then chop your veggies and in a large bowl toss with your favourite dressing and feta cheese.


Betty s molasses cookies

My grama Betty has made these since I was young and when ever i smell the batter I get a wave of great memories of being in my gramas kitchen how it smelled and how it looked. My favourite thing about these cookies is having them with tea and visiting wth my grama. These cookies go so good with tea!!!
What you will need
1 cup of shortening
1 cup of sugar
1 cup of fancy molasses
1 egg
1 cup of hot water
4 cups of flour
1 tsp salt
1tsp of ginger
1tsp of cloves
Mix in separate bowl your shortening, sugar, fancy molasses ,mix and then add your egg in other bowl mix your dry ingredients, then in a measuring cup have your cup of hot water and put 2 tsp of baking soda , now begin adding soda water to molasses mix a little at a time then alternating with dry mixture add a little of each at a time until its all in one bowl. Walnuts and rasins are great addition to this recipe.
Now bake at 400 for about 20 minutes remove if corners are getting to dark.

  • 16 ounces cream cheese
  •  

     

  • 1/4 cup of tex mex shredded cheese
  •  

     

  • 1/2 cup shredded sharp cheddar 
  •  

     

  • 1/4 cup of shredded white onion
  •  

     

  • 1/4 green pepper
  •  

     

  • 1/2 jalepeno pepper
  •  

     

  • 1/2 teaspoon of onion powder
  •  

     

  • 1/2 teaspoon of mexican spice
  •  

     

  • 1/2 teaspoon garlic salt
  •  

     

  • 1/2 teaspoon <span>cayenne pepper</span>
  •  

     

  • 1/2 cup pecans, chopped (or ground)
  •  

     

  • 1/2 teaspoon worcestershire sauce
  •  

     

 

 

Directions: 

 

 

Prep Time: 20 mins

 

 

Total Time: 1 day

 

 

  1.  

     

  2.  Let cream cheese come to room temperature.

     

     

  3.  Combine all ingredients in a medium glass bowl.

     

     

  4.  Mix well.

     

     

  5.  Shape like a ball and roll in nuts.

     

     

  6.  Refrigerate overnight for best flavour.

     

     

  7.  Serve with your favourite crackers.
